“The 2019 Fuego y Mar is a stunning wine, with seductive dark notes of ink, dark chocolate, black fig, lavender. The mouthfeel is incredibly silky start to finish, with a supple, beautifully textured palate of ultrafine tannins and an incredibly nuanced finish that lasts for minutes. Flavors of dark chocolate, resin, cedar, pipe tobacco, dried black fig, black cherry, and cinnamon stick are seamlessly interwoven. “Located on a ridge top in the Sonoma Coast AVA, Silver Eagle Vineyard is owned and passionately farmed by the Valdez Family, with a very present spirit of Ulises Valdez - an incredible man who passed his legacy of life, love and tending vines on to his talented children. The vineyard is in Occidental, not far from the Pacific Ocean, with two distinct soils – old seafloor and Sobrante volcanic – hence the wine’s name. The Cote Rotie Syrah clone is planted on a red volcanic hill. These vines are low-yielding and carefully tended. The red soils and cool, fog-shrouded and sun-bathed weather make for a dark, rich, dense Syrah with incredible texture and silkiness on the palate. In 2019, the grapes were harvested on September 27th and fermented in one small tank, spending 20 total days on the skins. The free run was drained to one 500L puncheon and one 228L Burgundian barrel (63% new oak overall) for elevage, with no racking, fining or filtration before bottling.
